Lonnie's Pumpkin Soup
Ingredients:
* 2 14oz. cans of fat-free chicken broth (vegetable broth for a vegetarian soup, if you prefer)
* 1 15oz. can of plain pumpkin
* 1 15oz. can of pumpkin pie filing (which includes spices)
* 1 1/2 cups of orange juice
* 3 Tablespoons of light sour cream
* 1 1/2 teaspoons of nutmeg
* 1 teaspoon of allspice
* 1 teaspoon of salt
* 1/2 teaspoon black pepper
- Heat the broth in your soup pot over medium-high heat for about 5 minutes
- Blend in the pumpkin and pumpkin pie filling into the broth using a whisk and continue to heat for an additional 5-6 minutes
- Stir in orange juice until completely blended with the pumpkin mixture
- Blend in the salt, pepper, nutmeg, and allspice
- Finally stir in the sour cream and cook for an additional 5-6 minutes
- Soup is ready to serve...preparation time less than 20 minutes! Just ladle into soup bowls and garnish with a dab of light sour cream(optional) ENJOY!
